2.5 lbs lean ground beef
1-2 Can Rotel
2 Eggs
2 Cups Oats
Salt
Garlic powder
Season Salt
Pepper
Ms. Dash
1/2 Cup Onion
1/2 stick butter
Large mixing bowl
Food processor
small sauce pan
2 Loaf pans or large casserole dish

Directions:
Melt butter in small sauce pan, dice 1/2 cup of onion, saute until completely cooked and remove from heat. Preheat oven to 350º
Open 1 can of rotel, place in food processor, purée and set aside. In the large mixing bowl, mix the lean ground beef, eggs, oats, onions, and 1/2 of the Rotel. Add salt, pepper, Ms. Dash, garlic powder, and season salt. All seasonings are to taste, so if you desire more salt add more than a pinch. Spray loaf pan or casserole dish with Pam or any non-stick spray; place mixture in pan and bake for approximately 30 minutes or until done. During the baking process drain any excess drippings off.
Approximately 10 minutes before meat loaf is done, drain all excess drippings off and pour the remaining rotel on the top of the meat loaf and continue to cook.
