¼ c. butter
1 c. sugar
1 egg, beaten
4 Granny Smith apples, cored, peeled, and diced (2 c.)
¼ c. chopped walnuts
1 tsp. vanilla extract
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
1 c. flour

Directions:

Preheat oven to 350º. Grease 8" square cake pan (or use cooking spray).

In a large bowl, cream butter and sugar until light and fluffy. Add the egg, apples, nuts, and vanilla and stir well. Sift in dry ingredients and mix well. Pour batter into the prepared pan and bake until cake is lightly browned and toothpick inserted into the center comes out clean, about 45 minutes. Let cool in the pan for 5 minutes, then unmold and serve hot or cold with whipped cream, vanilla ice cream or Cool Whip.
