2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 T. grated orange rind (optional)
3/4 c. orange juice
1 egg, well beaten
2 c. chopped cranberries
1/2 c. chopped nuts

Directions:
Directions:
Sift together flour, sugar, baking powder, baking soda, salt. Cut in shortening until mixture resembles coarse cornmeal. Combine juice and rind with egg. Pour all at once into dry ingredients, mixing just to dampen.

Carefully fold in nuts and cranberries. Spoon into greased loaf pan, spreading corners and sides slightly higher than center (it will rise in center during baking.) Bake at 350º for 1 hour. Crust should be golden brown and toothpick thrust into center should come out clean. Remove from pan and cool. Store overnight for easy cutting.
