3/4 cup Albers Cornmeal, white or yellow
1 1/4 cups + 1 T. flour
2/3 cup sugar
1 T. baking powder
1/2 tsp. sea salt
3 T. butter, melted
1/3 cup canola oil
1 T. honey
1 1/4 cups milk
2 eggs, beaten

Preheat oven to 350ºF. Spray 8" square baking dish with Pam Cooking Spray. Set aside.

In a large bowl combine cornmeal, flour, sugar, baking powder and salt. Set aside.

In small bowl, melt butter. Add oil, honey and milk and stir well. In separate bowl, beat eggs and combine with milk mixture.

Add wet ingredients to dry ingredients and stir only until combined. Small lumps will still be visible.

Pour batter into baking pan. Bake for 30 - 35 minutes until top is slightly browned and toothpick comes out clean.
