Your favorite baking potatoes

oven proof metal baking pan, w/ fitting lid
olive oil and course salt and fresh ground pepper

Directions:
Directions:
Place stabbed potatoes in pan , cover and bake about 1 hr or till fork tender, remove from oven and drizzle with olive oil add salt and pepper to taste, cover and swirl to coat. Place back in oven for about 5 min.

This works great on the grill too , place in indirect heat area, no need to foil all those potatoes.
I make extra so I have some for breakfast to slice or dice
