1 cup canned pumpkin
2 cups buttermilk
2 eggs
1-1/2 cups flour
1/2 cup brown sugar
1/2 tsp. salt
2 tsp. baking soda
2 T oil
1 tsp. cinnamon
2 tsp. pumpkin pie spice
1/3 cup chopped pecans

Directions:

Mix eggs, buttermilk, oil and pumpkin together then beat with a wire whisk. Add salt, baking soda, sugar and spices; gradually whisk in flour until batter is free of lumps and thickened. Drop 1/3 cup of batter on to hot, slightly oiled griddle for each pancake; sprinkle with chopped pecans. Flip when edges turn golden brown and bubbles start to burst; cook until dry in center. Serve with warm maple syrup.
