2 T butter
1 rib celery finely chopped
1 small onion finely chopped
1 14 oz can chicken broth
3 large potatoes, peeled and diced
2 tsp white vinegar
3 T flour
2 1/2 C milk
1/4 tsp salt
1 tsp pepper
2 C shredded Chedder cheese

Directions:
Directions:
In large pot melt the butter over medium heat. Add celery and onion and saute 5 to 7 minutes or until tender. Add chicken broth, potatoes and vinegar. cover and bring to a boil. Reduce heat to low and simmer for 20 minutes or until potatoes are tender. Add flour, salt and pepper, stir until soup is thickened and heated through. Add cheese and stir until melted.
