2/3 C Sugar
1/2 C Reduced Fat Sour Cream
2 T margarine or butter
2 egg whites or 1/4 C egg product
3/4 C mashed very ripe bananas
1 t vanilla extract
1 C flour
1/4 t salt
1/2 t baking soda
2 T finely chopped walnuts (optional)

Heat oven to 375 degrees. Spray square pan, 9 x 9 x 2 with nonstick cooking spray.

Beat sugar, sour cream, margarine and egg whites in large bowl with a mixer on low for about 1 minutes. Beat in bananas and vanilla for 30 seconds. Add flour, salt and baking soda. Stir in nuts if desired. Add to baking pan.

Bake 20 to 25 minutes or until light brown. Cool and spread with frosting of your choice, we use a container of pre-made cream cheese frosting which totally takes away from the Low Fat part of the recipe but it's GOOD!
