Ingredients: For Chicken: 3 chicken breasts ½ cup bottled Italian dressing 2 cloves minced garlic Black pepper Dressing: ½ cup sesame oil ½ cup grapeseed oil (if not available, use canola) ½ cup rice vinegar found in Asian section of local grocery 1/3 cup soy sauce 2 Tb mirin found in Asian section of local grocery 4 Tb toasted sesame seeds 2 Tb grated fresh ginger Salad: 1 head napa cabbage- shredded 2 cups shredded red cabbage 1 small red onion, thinly sliced into rings 1 medium red pepper- seeded and thinly sliced 1 bunch cilantro, chopped

Directions:Grilled Chicken: Mix the bottled dressing, garlic and pepper. Marinate the chicken in it for 30 minutes. Grill marinated chicken on preheated gas or charcoal grill on medium heat for 8 minutes per side or until juices run clear. Once finished, remove from grill, cool and slice. Dressing: Mix all ingredients well and store in glass bottle or jar. Cover and refrigerate until needed. Salad: Mix salad ingredients w/sliced chicken and desired amount of dressing. Toss well and serve. |

Notes: My dearest friend, Savannah Hubbard, prepared a version of this salad at a party I attended, and I swear I could NOT get enough of it. I played with the recipe, adding my own touches, and came up with what I think is a definite winner. Including the grilled chicken makes it an amazing meal on its own! Naan, spread w/butter, topped w/Greek seasoning, and grilled is a great bread choice to serve with this!
