1 dozen farm fresh eggs
1 8 oz can diced green chiles
1 bunch green onions, chopped
1 bunch cilantro, washed and chopped, stems included
2 Tb butter
2 cups shredded sharp cheddar or pepperjack cheese
Sea salt and freshly ground peppercorns to taste

Directions:

Crack eggs into large mixing bowl and beat gently.

Using large frying pan, heat butter on medium until melted.

Sauté onions and cilantro for 1 minute, then add in chiles.

Pour eggs over mixture, and cook on medium low, careful not to let eggs brown.

Add salt and pepper to taste.

Top with cheese, and serve hot.

We’ve served this selection of eggs at a few brunches.

It’s a definite favorite, especially in this area where Southwest cuisine is so popular.

When you are fortunate to be around when and where New Mexico’s famous hatch chile peppers are in season and readily available, try those instead of canned.

Either way, though, you’re sure to enjoy this tasty mixture of flavors.
