2 cups of unbleached all purpose flour
2 eggs
2 egg yolks
dash of sea salt, preferably from the Mediterranean Sea
extra virgin olive oil

You can mix this dough by hand by putting the flour on a board and forming a well in the center. Pu the eggs, salt, and olive oil in center of well and begin to mix by hand.
As an alternative, you mix it in a food processor that has a dough hook. Much easier. I coat the inside of the bowl and the hook with olive oil before I add the dough and eggs to the bowl.

At the end, knead so that the dough has an elastic feel, then wrap in saran wrap and let it rest for at least 3-4 hours at room temperature.

Cut the dough ball in to about 4 equal pieces and roll out quite thin. You can then cut wide noodle by hand, or you can through the machine and have the machine cut wide noodles. If you use a machine, I would recommend thickness 2 as that holds the sauce better
