2 c green or yellow split peas
8 c water or vegetable broth
3 vegetarian bouillon cubes
2 ribs celery, chopped
2 carrots, chopped
1/2 large onion, diced
2-3 cloves garlic, minced
1 tsp cumin
1 tsp sage
1 tsp thyme
3 bay leaves
salt and pepper to taste

Directions:

Combine all ingredients in slow cooker. Cover and cook on low for 6-8 hours, or until peas are soft and falling apart. Great with brown rice and a sprinkling of Parmesan cheese.
