4 eggs, separated
3 c. sifted all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. nutmeg
1/2 tsp. ground cloves
1/2 tsp. allspice
1/2 tsp. salt
1 c. butter or margarine, softened
2 c. sugar
1 c. buttermilk
1 c. blackberry jam
1 tsp. vanilla extract

Directions:
Directions:
Preheat oven to 325 degrees. Grease a 10" tube pan. In small bowl, beat egg whites until stiff peaks form; set aside. Combine flour, cinnamon, soda, nutmeg, cloves, allspice and salt; set aside. In large mixer bowl, cream butter or margarine and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Add buttermilk alternately with flour mixture. Add jam and vanilla and beat just until well mixed. Carefully fold in beaten egg whites. Pour mixture into prepared pan. Bake 30 minutes. Then increase oven temperature to 350 degrees and bake 55 minutes more or until toothpick inserted in center comes out clean. Makes 16 servings. About 325 calories per serving.
