1 1/2 cups overripe bananas (3 medium)
1 whole egg and 2 egg whites (or 2 eggs)
5 T softened butter (Smart Balance works great and is great for you)
3/4 cup brown sugar (or substitute with 50/50 Splenda brown sugar)
1/2 cup sugar (or substitute)
1 T vanilla
1 1/2 cup whole wheat flour
1 t baking soda
1/2 t salt
1/2 cup light sour cream (or regular works, too)
optional: chocolate chips, walnuts, pecans, cranberries, cherries, etc

Directions:
Directions:
Mix wet ingredients together in bowl. Mix dry ingredients together in separate bowl. Combine little by little without over mixing. Fold in sour cream and optional ingredients. Pour into bread pan sprayed with nonstick oil, or coated in thin layer of oil or butter. Bake 45-50 minutes in a 375 oven. Check on frequently, baking time varied by oven (usually less in convection oven).
