2 Tbsp. pine nuts
1 1/2 lbs. green or waxed (yellow) beans
1 C. coarsely chopped basil, plus several leaves for garnish
1/2 C. thinly sliced jarred roasted red peppers, drained
2 cloves garlic, minced
1/4 C. olive oil
1 Tbsp. lemon juice
Salt and pepper to taste

Lightly toast pine nuts. Let cool.In a pot of boiling, salted water, cook the beans until tender, about 4 minutes. Drain and refresh under cold water; drain well. In a large bowl, combine the pine nuts with the chopped basil, roasted red peppers and garlic. Add the olive oil and lemon juice. Season with salt and pepper. Add the green beans and toss to combine. Garnish with basil leaves and serve. Serves 6.
