Half pound fresh Nantucket scallops
Panko, salt, pepper, fresh parsley
Small sweet potato
Green Beans, almonds, tomato, butter, sugar


Directions:
Directions:
Cook green beans in a an inch of water in the microwave, 3 minutes
In saute pan, 2 t butter, 1 t sugar, 1/4 cup sliced almonds, Stay with this...just takes a minute or two.. set on a plate
Slice a small tomato..set aside

Micro the small or quartered segment of a large sweet potato....3 minutes

Rinse, dry in paper towel the scallops. Toss them in a 1/4 cup planko with s & p to taste.

Here comes the timing....toss the green beans in the saute pan you used for the almonds, add the thin sliced tomato

In another small saute pan, add the scallops to a heated pan with 1 t butter and 1 t good olive oil and a shake of crazy salt. Two minutes max. Add the fresh parsley. Toss...

Serve all immediately.

A glass of white wine works nicely....I thought it was great
