Ingredients: 2 boneless chicken breasts cubed 1 box Uncle Ben's wild rice 24-30 oz chicken stock 1 carrot shredded 1 sm onion diced 1 rib celery sliced very thin 12 0zs sliced mushrooms 1 can evporated milk ( you can use reg milk) 2 tbsp white wine salt and pepper garlic powder

Directions: |
Directions:Season chicken with salt, pepper and a little garlic powder. Dice the chicken up into 1" pieces. Put a little oil in bottom of pot to saute the chicken on low heat 1-2 minutes. Do not brown chicken. Remove chicken to a bowl. Add mushrooms and saute until dry. Add chicken stock, carrots, celery and onion cooking half way. Now add the uncle Ben's wild rice and cook until rice is tender about 15-20 minutes. Stir often. Add the chicken and white wine cook until chicken is done. |
