2 cups milk
3/4 cup melted butter
1/2 cup flour
salt and pepper to taste
Extra 1 tablespoon butter

Directions:
Directions:
Scald milk in saucepan (heat until bubbles form at edge). Melt butter in another saucepan until it begins to just barely form a haze (should not smoke). Add flour, stir until smooth and golden. Add salt and pepper to taste. Stir in scalded milk gradually and beat with a wire wisk until smooth. Reduce heat and simmer 5-10 minutes, stirring occasionally.

This is the best over country fried chicken! Rodney makes this much better than me! I seem to burn it, make it lumpy, too thick, oh, something always goes wrong. I'm in too big of a hurry and want to change it up!
