2 cups chopped fresh rhubarb
9" deep dish pie shell
1/2 cup packed brown sugar
3 tbsp.flour
1/2 tsp. grated orange rind
1/4 tsp. cinnamon
2 eggs
1 can evaporated milk
1/2 tsp. vanilla
maple syrup, optional

Directions:
Directions:
Spoon rhubarb into pie shell. Bake on foil-lined baking sheet in 425º oven for 10 min.
Meanwhile, in bowl, combine brown sugar, flour, orange rind & cinnamon. Beat in eggs, evapoarated milk & vanilla; pour over rhubarb. Reduce oven to 350º & bake for 45-50 min. or until top is golden & custard is set. Serve warm, topping each serving with 1 tbsp. maple syrup.
