4 cups of water
2 large onions, quartered
Parmesan cheese rind
Optional - carrots, celery

Combine all ingredients in a large pot, bring to a boil - then simmer for at least an hour. Strain.

I like to stretch things that I use a lot of like stock, and I also like to use leftover food that I can't composte like the rinds from my parmesan cheese. It really flavors the chicken stock well and then I use my stock in my beans and greens, and pastas and soups. I saw it on some cooking show a while ago!
