Crust:
2 c. flour
1 c. butter
1/2 c. powdered sugar

Topping:
4 eggs
4 c. diced rhubarb
3/4 tsp. salt
2 tsp. nutmeg (optional)
2 c. sugar
1/2 c. flour
1 tsp. cinnamon (optional)

Directions:
Directions:
Preheat oven to 325º.

Mix crust until crumbly. Press into 9x13 pan. Bake at 325º for 15 minutes.

For topping: beat eggs, add sugar, beating well. Add flour, salt, nutmeg and cinnamon, mixing well. Stir in rhubarb. Spread over baked crust.

Bake at 325º for 45 minutes. Cool on rack before cutting.

The word "bars" in the recipe name is somewhat misleading. This comes out more like a cake or a crisp. We like to add whipped cream or ice cream to the individual servings for variety. Though the recipe says "optional" for cinnamon and nutmeg, I cannot imagine leaving them out unless your family does not like these spices.
