2 lbs of goat meat with bones(ribs better)
10 medium potatoes cut in cubes
4 garlic cloves
3 bay leaves
4 red beef tomatoes sliced
2 large onions sliced
4 green peppers sliced
2 carrots sliced
3 tbs of minced persil
3 tbs of minced cilantro
1 cup of olive oil
2 cups of chicken broth or stock
2 cups of white wine (not sweet)
1/2 tbs of black pepper

Trim, wash, cut the meat in bite sizes
Season well with garlic, salt, black pepper, bay leaves, white wine and let it marinate for a few hours (better if overnight)

Cook meat in a pressure cooker for 10 min.
In a large pan add all the ingredients by layers, starting with the potatoes . Adjust salt, pepper and sauce. Add 1 medium can of green or black olives. Cook for about 1 hour or so. Do not stir, but try to shake the pan gently.
(The amount of the gravy it is not the same as what you guys call soup and it is not watery. Has to be a little thick )

Eat alone or with plain rice.
