1/2 lb bacon cut into 1/2 in. pieces
1 lb. ground beef
1/2 c. chopped onion
1/2 c. ketchup
1/2 c. firmly packed Dark. brown sugar
2tsp. white or apple cider vinegar
1/2 tsp. salt
1-16oz. can pork & beans drained
1-16oz can lima beans drained
1-16oz can kidney beans drained
1 tsp. dried mustard

oven temp 325 degrees
Preheat oven-cook bacon until crisp, remove from skillet & drain on paper towel. Retain bacon fat, add some fat to skillet & cook ground. beef until brown & crumbly. Stir occasionally, remove from skillet. Add enough bacon fat to cook onion till transparent. Combine bacon, beef & onion with the remaining ingredients, mixing well to blend. Put into a deep 3 quart casserole & bake uncovered @ 325 degrees.
For a healthier version substitute ground. beef for turkey, pork bacon for turkey, doesn't really need added salt.

I remember Grandma Lib making these and Josh had them for the first time 2/11 and loved this dish. We ate it with a big salad.
