1/3 cup soy sauce
2 tablespoons olive oil
2 tablespoons white wine (optional)
1 T. plus 2 tsp. sesame oil
2 cloves garlic, minced
1 (2-inch-long) piece fresh ginger root, peeled, minced
1 bunch bok choy, chopped
1 package (8oz.) fresh sliced mushrooms
1 ½ lbs. salmon fillets
2 green onions, chopped

Preheat oven to 425.º. Mix soy sauce, olive oil, white wine, sesame oil, garlic and ginger and set aside. Place bok choy and mushrooms in 13x9 inch baking dish. Place fish on top of vegetables. Sprinkle fish and vegetables with onions; pour soy sauce mixture over top. Cover with foil. Bake until almost cooked through, about 20 minutes. Remove from oven. Turn oven to broil; uncover fish. Broil salmon until browned, about 3 minutes.
