2 tablespoons vegetable oil
2 tablespoons butter
1 teaspoon brown sugar
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
2 cups shelled pecan halves
1/2 teaspoon salt

1. Heat oven to 350º. Coat jelly roll pan with nonstick cooking spray.

2. Heat oil and butter in sauce pan over medium heat; stir in brown sugar, cumin, paprika, garlic powder, cayenne; cook 2 minutes stirring occasionally.

3. Place pecans in bowl. Add oil mixture and half of the salt (1/4 teaspoon); toss to mix, then spread evenly onto prepared pan.

4. Bake in 350º oven for 10 minutes. Turn with spatula, then bake 6-12 minutes more, until nuts are getting browned and aromatic. Remove from oven and sprinkle with remaining 1/4 teaspoon salt. (I use coarse sea salt for this sprinkling, but use plain table salt for the cooked butter/spice mixture.).

5. Cool pan on wire rack, then remove nuts and drain them on about 4 layers of paper towels, and gently blot excess oils with paper towel too. Store airtight at room temperature, for up to 2 weeks.
