1 lb.white Great Northern Beans
water
onion (raw or dried)
salt
pepper
ham seasoning (bone from cooked ham or country ham, watch out for ham being salty)
cut potatoes or fine noodles ( optional)
tomato juice

Directions:
Directions:
Sort the "bad" beans before soaking. Cover with water and soak for 4 to 5 hours. Set on stove and bring to a slow boil. Pour that water off beans. Cover with fresh water, add onion, raw or dried. Season with salt and pepper.
Add ham seasoning and tomato juice. May add cubed potatoes or fine noodles. The" amounts" of ingredients differ according to cook's taste. Use moderate heat to keep from sticking. Cook at least 1 1/2 hours.

*Ed's extra flavor advice. When beans are soft, take socks and shoes off and stomp the beans- toe jam is tasty!
