flour
eggs
bread crumbs
oil for frying

Directions:
Directions:
If mushrooms are not bite-size, quarter or halve them. Roll in flour to coat. At this stage, mushrooms may be refrigerated and finished the next day. Whisk 1 egg with 1 T. water. Dip mushrooms in egg and then bread crumbs. Cover the bottom of a heavy pan with oil. When hot, place a single layer of mushrooms in pan and stir around to brown all sides. Remove to a cookie sheet and place in 300º oven. Repeat until all mushrooms are done. Keep warm until ready to serve.
