4 pounds corned beef brisket
1 cup dark brown sugar
1 bottle (12 oz) Guinness beer

Directions:
Directions:
1. Preheat oven to 275º.

2. Place corned beef in large roasting pan. Spread pepper packet that comes with the meat over the brisket. Rub ½ of the brown sugar on the meat, flip, and rub the other side with the remaining ½ cup. Make sure meat is fat side down in the roaster when it’s cooking. Pour bottle of beer in the roaster.

3. Cover and bake for about 5 - 6 hours. Baste every 30 minutes.

4. After about 5 hours, add one whole bag of small red potatoes (cut in half) and whole bag of peeled baby carrots. Cover and bake for another 45 minutes, or until tender. Baste every 20 minutes after the veggies are added.
