1 tablespoon extra virgin olive oil
1 medium onion
1 clove garlic
1 teaspoon crushed dried basil
2 pounds lean pork tenderloin, cut into 1 inch pieces
1 28 ounce can diced tomatoes, untrained
1 15 ounce can 100% pumpkin
½ teaspoon salt (optional)
¼ teaspoon black pepper
4 medium white potatoes, peeled and cubed
½ bag frozen green beans
1 cinnamon stick


Directions:
Directions:
Heat oil in a saucepan over medium high heat. Add onion, garlic, and basil; cook for 1 minute or until onions are tender. Add pork; cook for 3-4 minutes or until lightly browned. Add tomatoes with juice, pumpkin, and broth. Salt and pepper to taste. Bring to boil. Reduce heat and cook for 5 minutes. Add potatoes, green beans, and cinnamon. Cook until potatoes are soft. You can serve in a pumpkin that has been cleaned out.
