3 Dozen eggs
1/2 cup of milk
1/2 cup of butter
2 10 3/4- ounce cans of cream of mushroom soup
2 cups of grated sharp cheddar cheese, divided
1/2 cup sherry
2 pounds of sausage cooked and drained, or chopped ham
1 pound of mushrooms, sliced and sautéed

Directions:

Combine eggs and milk, blending well.
Scramble egg mixture in butter until soft.
Combine soup, 1 1/2 cups cheese and sherry in a medium saucepan. Heat until cheese melts.
In each of two greased rectangular baking dishes, layer scrabble eggs mixture and sausage or ham and mushrooms.
Pour soup mixture over mushrooms.
Top with remaining 1/2 cheese.Cover and refrigerate over night.
Bake, uncovered at 275 degrees for 50 minutes

This wonderful brunch or luncheon dish is great for a crowd. I really liked the fact that I put it all together the night before and just put in the oven 1 hour before I plan on serving it. The first time I ever made this was for my grandson Caelan Daniel's baptism and it was a big hit with everyone that day.
