Ingredients: 1 1/4 c. sifted cake flour 1 1/4 tsp. baking powder 4 T. butter 3/4 c. granulated sugar 1 egg, well beaten 1/2 c. milk 1 t. vanilla 5 T.pineapple and juice from pineapple !/2 c. brown sugar packed 1/4 c. butter

Directions:Sift flour once, measure and add baking powder & salt. sift together. Cream butter through and gradually add sugar. add egg and beat well, add flour mixture alternating with milk. Small portions at a time. Add vanilla. In a large iron skillet melt 1/4 c. butter and add brown sugar, stirring until melted and blended. Lay your pineapple rings on the brown sugar&butter Pour cake batter over the fruit. Optical ( place a maraschino cherry in the center of each pineapple ring) Bake at 350 degrees for approx.35 minutes. Turn out onto a large plate and let cool before serving. |

Notes: This was my Great Grandmother Key's receive. I had lost it and was forever hunting for it and just couldn't find it. I was talking to my cousin Jean Nair (Richards wife) I was telling them about the family cookbook and mentioned I had lost this old favorite recipe of our great grandmothers. I was so excited when Jean said she had the recipe. she sent it to me, I made it and it was just like I remember the ones Grandma Key's used to make. It is such a quick and easy recipe. Hope you all like it as much as we do.
