Ingredients:  
1 lb. Lasagna noodles
1 lb.. butter
1 lb. Longhorn cheese
5 lbs. potatoes
5 lbs. onions

Directions:
Directions:
Mash potatoes. Add butter as usual, but no milk. mix about 1/3 lb. longhorn cheese (shredded). mix through. Cook and drain lasagna noodles. Saute sliced onions in butter until they are soft,but not browned. In a 9x13 inch baking pan, Layer in order the butter and onions, lasagna noodles, mashed potatoes. Then sprinkle shredded cheese. Repeat until all ingredients are used up. ending with butter and onions as the top layer. Cover with aluminum foil, Bake at 350º for 30 minutes. Let stand 5 minutes or so after removing from the oven. Cut into squares. Serve with sour cream if desired.

I also sometime saute cabbage with some onions in olive oil and add them in as one of the layers. Really any filling you would put in regular pierogi you can layer into this lasagna. This is a little quicker and easier than making the regular individual pierogi.
