1 c. brown sugar
1/3 c. butter
1 c. granulated sugar
3 eggs
5 T. pineapple juice
1 c. flour
1/2 tsp. salt
1 jar Maraschino cheeries
2 tsp. baking powder

Directions:
Directions:
Melt brown sugar and butter in a 10" iron skillet, cover with pineapple rings,*optional (maraschino cherries in center of slices)
Mix: Granulated sugar, eggs, pineapple juice, flour, salt and baking powder. Pour into iron skillet and bake at 350 º for 45 min. Remove from the oven and invert onto a serving plate.

This was my Great Grandmother Keys' recipe. I had lost it and was making my self crazy trying to get just the right cake batter, I was always trying to duplicate Grandma Keys. This was always the family favorite. and I thought it was just lost to me until I was talking to my cousin Jeanne Nair, (Richard's wife) she told me she had the recipe and sent it to me and it taste exactly the same as I remember it. THANKS JEANNIE! I am so happy to have this one again.
