3 lbs. ripe peaches
2 T. lemon juice, fresh or reconstituted
1 box Sure-Jell
5 1/2 c. or 2 (6oz.) sugar

Peel, pit and chop fine or grind peaches. Measure peaches and for 4 c. peaches add 2 T. lemon juice. Mix 1 box sure-jell with fruit in a large sauce pan (6-8 qt. size) Bring quickly to a full rolling boil, a boil that can't be stirred down. Boil hard for 1 min., stirring constantly. Remove from heat and skim off foam with a metal spoon, ladle quickly into sterilized jars leaving 1/8 in. space at top. Wipe tops and threads of jars with a damp cloth. Seal as manufacturer directs.

Wash, scald and drain jars and 2 piece lids with very hot water (or use dishwasher) to sterilized jars.

Boil lids and rings in a saucepan of water.
