2 cans beets
1 to 1 1/2 liquid1/2 c. beet juice (add water if your juice doesn't quite make it up to 1 1/2)
1 c. vinegar
1/2 c. water
2 T. of brown sugar
1 T. pickling spice

Directions:
Directions:
Mix together all ingredient's except the beets. Sweeten the liquid with the brown sugar to your taste. Some people like it sweeter than others. If you prefer your beets a little more tart, start with 1T. brown sugar, stir an taste adding sugar until you have it suite your personal taste. Add the pickling spice and bring the liquid to a boil for about 2 min. Pour hot liquid over your beets, refrigerates until your cooled beets are very cold. Add hard-boiled eggs to the cooled mixture. I like to make mine the days before I am going to use them so the eggs really take on the flavor of the juice.
