1 Chuck Roast (4or 5 lbs)
4 quarts water
3 stalks celery
2 med. onions (quartered)
1 tsp. salt
1 tsp. pepper
2 T Beef base (or 4 bouillons cubes)
5 or 6 potatoes (peel& cut up)

Dough for Patch noodles:
4 eggs
1/2 tsp. salt
3 T Crisco
2 or 3 C flour

Directions:
Directions:
Put the roast, salt, pepper, soup base, celery, and onions into a large soup pot. Cover with water; simmer until the meat is tender.
Remove the beef from the broth, pull apart into bite size chunks, set aside. Strain the broth, discard the celery and onions, return the broth to the pot.

To make the patch noodles;
Beat the eggs together; add the salt and 3 T Crisco. Work the flour into the mixture until it is no longer sticky and holds together. Flour a pastry sheet or the counter if you don't have one. Roll out the dough to about 1/8 inch thick. Cut the dough into 1 1/2 inch squares. Lay out and let dry about 15 minutes. Add the potatoes to the broth. .
Next, drop the patches into the broth, one at a time to keep them from sticking together. They will float to the top when they are done. Stir often during the process. Add the beef. When the potatoes are tender the pot pie is ready to serve.

Our Mother always made Beef Pot Pie. Our Aunt Betty always made the Pot Pie with ham, and my niece Dawn's husband likes her to make it with chicken. I have eaten all three at one time or another and prefer the beef. I guess because it's my Mom always made it with beef.
