4 large very ripe plantains
2 cups edible palm oil
1 tsp freshly grated ginger root
1 tsp cayene pepper or red pepper
1 tblsp confectioner's sugar
2 tblsp water
1 tsp salt
1 tsp ground cloves
1 tsp ground nutmeg

Directions:
Directions:
Plantain must be very ripe with outer skin showing dark spots.
1. Grind together grated ginger root, pepper, and salt, then mix with water
2. Cut plantain in half
3. Remove outer skin
4. slice lenght-wise into thin strips•
In a glass bowl toss together the plantain cubes and spice mixture.
5. Heat oil to 350 Fin skillet or deepfryer
6. Place plantain in oil and cook till golden brown.
7. Remove plantain and place on paper towels to drain excess oil.
8. Place plantain on platter and sprinkle with nutmeg, cinnamon and sugar
9. Serve warm as an appetizer, dessert or side dish.
