1 yellow ripe plantain
1 idaho russet potato
1 clove garlic
1 small onion sliced
2 eggs
1/2 cup water
1 cup diced luncheon meat
1 tablespoon vegetable oil
salt and black pepper to taste
1 teaspoon parsley flakes

Directions:

1 .Cut plantain into 4 pieces leaving skin on
2. Cut russet potato into 4 - six wedges
3. Put potatoe and plantain in small pot or sauce pan.
4. Add water and bring to boil for 10 minutes or until done
5. Remove from stove and drain water off
and remove skin from plantain and
potatoes
.6. In separate fry pan make scramble sliced
7.Combine potatoes, plantain, sliced onion, garlic, with eggs. and diced luncheon meat.
8. Add oil and water and cook for 2 minutes.
9. Remove from stove, sprinkle parsley flakes and serve.
9. Salt and pepper to taste
