2 boneless, skinless chicken breasts, cut in 1/2 in chunks 1 tsp. salt
2 tbsp. butter 1/2 c. chopped onions
freshly grated zest of 1 lemon 2 1/2 tbsp. lemon juice
2 tbsp. olive oil 1 tbsp. dried tarragon
2 tsp. minced parsley 8 oz. Angel Hair pasta
salt and pepper to taste 1/2 c. grated Parmesan cheese

Directions:
Directions:
Salt the chicken breasts. Over medium heat, melt the butter, add the chicken and onion; saute until the onion is limp. Remove from heat, stir in lemon zest, lemon juice, tarragon, and parsley. In a large pot of boiling, salted water, cook the pasta till tender. Drain and transfer to the skillet with chicken mixture. Toss well; Finally add olive oil and season with salt & pepper and Parmesan cheese.
