Cream:
2/3 c. shortening 2 2/3 c. sugar
Add:
4 eggs 2/3 c. water
Beat well and add...2 cups pumpkin (or a variation listed below)
Add:
3 1/3 c. flour 1/2 tsp. baking powder
2 tsp. soda 1 1/2 tsp. salt
1 tsp. each cinnamon and cloves 1 c. pecans, chopped, (optional)

Wash and dry 8 pint size (wide-mouth) canning jars. Grease well. Fill jars 1/2 full. Bake in 325º preheated oven for 45 to 55 minutes. When done, remove one at a time from oven. Put warmed canning lid on and tighten with ring. It will seal as it cools. For gifts, tie ribbon around lid. Hot glue appropriate ornament.
VARIATIONS: Omit the pumpkin and substitute any of the following:
2 c. applesauce
1 can whole cranberry sauce (I omit the spices when I do this one)
2 c. shredded apples
2 c. shredded carrots
2 c. shredded zucchini
2 c. mashed bananas
1 c. shredded apples, plus 1 c. shredded carrots
