1 # hamburger
soft tortilla shells/large size
cooking oil- enough to fry tortillas in
i can of refried beans
large jar of your favorite salsa
shredded cheese- cheddar/monteray jack

Directions:
Directions:
Fry hamburger and drain/ add refried beans to hamburger and pour in half a jar of salsa. I add about a tsp. of sugar to the mixture and let it simmer a few minutes. Fill each soft tortilla (usually about 8 large ones) with the hamburger mixture- enough to make it full, but not overflowing for when you fry them. Fold bottom of tortilla first, then each side over. Heat a layer of cooking oil in skillet and let it get hot- then add two filled and folded tortillas at a time. Watch closely! Don't let oil get too hot and if the hamburger mixture spills out, you will need to remove it as it will pop in the oil. Turn the tortillas over when brown and brown each side a few minutes- turn heat down if too much spattering or if they are getting too brown. Drain each on paper towels to soak off excess oil. Top each with more salsa and shredded cheese and then heat in microwave enough to melt the cheese. Add sour cream and/or guacamole and you have a great Mexican meal! (Not too healthy- but delicious! Taste great the next day heated up, also.)

Be cautious with the hot oil- really spatters if too hot or if the meat filling gets into the grease from the tortilla. Just don't fill them too full. Enjoy!
