Marinade #1:
¼- 3/8 C. lemon juice (juice of two lemons)
¼ C. olive oil
4 cloves minced garlic or 2 t. garlic powder
½ T. dried dill
Marinade #2 - great for Salmon or Halibut
¼ C. coarse mustard
2 T. pure Maple Syrup
Marinade # 3
¼- C. lime juice
2 T. peanut or sesame oil
4 cloves minced garlic or 2 t. garlic powder
1 T grated ginger
1 T. reduced sodium tamari sauce
1/4 t. red pepper flakes

Directions:
Directions:
Place fish, skin side down on tin foil in pan (leaving extra foil to cover). Cover with marinade and seal foil into packet. Marinate at least two hours before cooking. Bake 350 or barbeque med. coals, filets - 20 minutes, steaks – 30 minutes.

Marinade #4 – this is best broiled for 3 minutes uncovered until glaze begins to blister and brown, then cover loosely and broil until cooked through, about 5 minutes longer.
2 T orange juice
1 T. rice wine vinegar
2 t. dark brown sugar
1 t. grated orange peel
