salt (sprinkle lightly)
2 cups milk
2 cups flour
2-3 cups Crisco, melted

Directions:
Put Crisco in iron skillet and melt until hot. Dip each pork chop in milk then salt lightly. Put flour and 2 pork chops in a large Ziploc bag and shake to coat.
Place 3 floured pork chops in skillet and fry on med/high until done about 5-8 min on each side or until done. Repeat with remaining chops. Note: Use this same technique for frying round steak or chicken (only omit the milk and use more salt, deeper Crisco and fry longer for chicken). This is how my great-grandma, Helen Yount fried her chicken.
