3 eggs - separated
10 ounces sharp shredded cheese
1 tablespoon flour
1/4 teaspoon salt
Pinch of cayenne pepper
1 tablespoon water
1/2 cup cracker meal or finely crushed saltine crackers

Directions:
Directions:
Beat egg whites until stiff. Combine cheese, flour, salt and pepper. Beat into whites on low speed. Blend yolks and water in small bowl. Put a tablespoon of cheese mixture in crumbs and roll into a ball. Roll in egg yolk mixture and again in cracker meal. Refrigerate 2 hours. Heat oil in deep fat fryer to 375º. Cook until golden brown.
