8 med.peeled white potatoes
1 egg yolk
1 T. salt
2 -2 1/2 c. flour

Directions:
Boil whole potatoes until tender. (Do Not Puncture!) Mash potatoes through a ricer into a large bowl; let cool slightly. Add egg yolk, salt and 2 c. of flour. Mix well. Knead mixture into a ball. It should be soft and slightly sticky. (If too sticky add more flour). Lightly flour surface and your hands. Shape pieces into a log (about as thick as your thumb). Cut in 3/4" pieces and roll off your finger. (I will show you how !). To cook bring a large saucepan of salted water to boil (add a little oil). Add gnocchi....when they come to the surface cook 15 -20 seconds. Remove with strainer. Add your favorite sauce and fresh grated cheese.

This is a Rapone specialty, and very popular in the region outside of Rome where our "roots" are. Aunt Mary's gnocchi were the best ! I am so proud that Coopie whipped these up for a dinner party..we need to keep these family traditions alive. This indeed is a Rapone favorite! My mother would whip these up with little effort...I remember her cutting them and throwing them right into a pot of boiling water for Thursday night sauce ! She was amazing and made everything she cooked seem effortless!
