You will need
•Sliced deli mozzarella
•1/2 lb. ground beef
•2 medium shallots (diced) or 1 small onion
•Sliced mushrooms
•Salt & pepper
•Diced stewed tomatoes
•Grated Parmesan cheese
•Butter
•Pizza dough
•1 egg white

Directions:
Directions:
First, salt to taste and brown the ground beef and shallots until the beef is just done. Drain the fat and set aside. Lightly saute the mushrooms in the same pan, adding a little salt and pepper, and set them aside as well.

Preheat oven to 375° and line a cookie sheet with aluminum foil.

Coat the entire inside of the ramekins with butter and generously dust with grated Parmesan — making sure the bottom is completely covered. I added a little extra in the bottom just to be safe as this is what keeps the melted mozzarella from sticking to the ramekin.

Next, layer 3 or 4 slices of mozzarella on the bottom of the ramekin. The layer should be about a quarter inch thick.

On top of the mozzarella goes a layer of the ground beef and shallot mixture.

Tear one slice of mozzarella into pieces and arrange it on the ground beef as shown — so it almost, but not quite, touches the sides of the ramekin.

The sautéed mushrooms get layered on next.

Then pile on the tomatoes and a generous amount of grated Parmesan.

Roll out enough dough into a circle large enough to cover the filled ramekin so the edges of the dough will go all the way down the sides. Rub a little butter on the outside wall of the ramekin and gently place the pizza dough over the entire thing.

Brush the dough with egg whites. Place the ramekins on the foil covered cookie sheet and bake in 375° oven for 25-30 minutes or until golden brown.

Remove from the oven. Serve upside down on a plate, and slowly remove the ramekin (I used tongs and an oven mitt).

These “pizzas” can be filled with whatever you want. It doesn't’t have to be what I listed above, use your favorite pizza toppings. Experiment and enjoy.

Inspired by a Chicago pizza joint that I saw on the Food Network, I decided to attempt making this upside down pizza for one. The toppings and cheese are assembled in a oven-safe bowl or ramekin, the pizza dough is draped over the top and whole thing is baked. When served, it is flipped over and the ramekin is removed to reveal the upside down pizza.
