3 (6-oz.) jars marinated artichoke hearts, chopped.
oil from the artichoke hearts
3 bunches green onions, chopped
1 clove garlic,chopped
8 eggs, beaten
10 soda crackers, crumbled
1/2 bunch parsley, chopped
1 lb. cheddar cheese, grated
1 dash Tabasco sauce
1 dash Worcestershire sauce
salt and pepper to taste.

Put oil from artichoke hearts in fry pan. Fry onions, and garlic until limp. In bowl, add cracker crumbs to beaten eggs and beat again. Add parsley, cheese, Tabasco and, Worcestershire sauces, and artichokes, beat well after each addition. Season with salt and pepper to taste. When all is well blended,pour in oiled 8x12 glass pan, bake in 325 degree oven for 35 minutes, or until firm. Let cool. Cut into 1 inch squares. Can be served hot or cold, however you like. Delicious.

A great party favorite! Love to serve this to guests as they arrive with wine or drink of choice. Given to me by an Italian friend who is third generation wine maker.
