2 cans artichoke bottoms
2 pkgs. frozen, chopped spinach, drained
1 tbsp. melted butter
1 tbsp. fresh lemon juice
1/2 to 1 tsp. anise (to taste)
2 tbsp. whipping cream
1 sprinkle fine bread crumbs
1 sprinkle Parmesan cheese, grated

Substitution: You can also use large mushrooms instead of artichoke bottoms.

Combine all ingredients, except artichoke bottoms. Place artichoke bottoms on a baking sheet and stuff each one with the mixture. Bake at 350º for 20 minutes.

Can prepare and refrigerate a day ahead. Remove from refrigerator and bring to room temperature before baking. This is a guaranteed hit for dinner or cocktail parties!
