6 tbsp. bacon grease
7 tbsp. flour
3 cups heavy cream
2 cups milk
Salt and pepper (to taste)
Whiff of cayenne pepper

In a large pan, heat bacon grease to rather high, but not boiling hot. Turn to low and start adding flour gradually, slowly stirring to keep from lumping. When flour is incorporated into bacon grease, slowly add milk and cream, continuing to stir to avoid lumps, until you achieve the desired thickness. Do not let this gravy brown. It should have "body," thick enough to pour over a biscuit (certainly not runny). Add salt, pepper and cayenne. The pepper is important for added flavor and the cream keeps the gravy ... well ... creamy!

This is the cream gravy you want on your fried chicken, chicken fried steak and biscuits! Half this recipe for a smaller crowd.

Cream gravy can also be made more decadent by adding chopped breakfast sausage or bacon bits to the gravy as it's heating. If you're worried about the extra calories this adds, who are you kidding? You're already eating a dish made from bacon grease, flour, heavy cream and milk!
