2 tablespoons vegetable oil
1 pound chicken breast, cut into strips
2 cloves garlic
1 2.7 ounce package fajita seasoning
1 red bell pepper cut into thin strips
1 green bell pepper cut into thin strips
1 poblano pepper cut into thin strips
1 large onion cut into thin strips
1 can corn
1 can Rotel
1 can black beans, drained and rinsed
28 ounces chicken broth
Dash of hot sauce
Salt and pepper to taste
Sour Cream
Avocado
Tortilla chips
Shredded cheddar cheese
Directions:
Directions:
Heat oil in large soup pot over medium heat. Place chicken and garlic in hot oil and cook until brown, about 10 minutes. Sprinkle fajita seasoning over chicken and stir well to coat. Add the peppers and onion and cook over medium heat until vegetables are soft. Add black beans and chicken broth to chicken and vegetables. Bring to boil over high heat, then reduce heat to medium low and simmer uncovered for 30 minutes, stirring occasionally. Season with hot sauce, salt and pepper to taste before serving. Serve with sour cream, diced avocado, tortilla chips and shredded cheese.
